The lipids in foods and in the human body fall into two classes of the lipid family, including the phospholipids and the triglycerides. Although too much fat in the diet has the potential to be harmful, lipids serve many valuable functions in the body. Fat is the body's chief storage form for energy from food eaten in excess of need. In addition, fat surrounds and cushions all the body's vital organs and insulates the body from extremes in temperature. Some essential nutrients, such as the essential fatty acids and the fat-soluble vitamins A, D, E, and K, are found primarily in foods that contain fat. Fatty acids are the major constituent of triglycerides, which are the chief form of fat, and they differ from one another in two ways: in chain length and in degree of saturation. The more unsaturated a fat, the more liquid it is at room temperature. Generally, vegetable oils are rich in polyunsaturates. However, certain vegetable oils, including coconut and palm oil, are highly saturated. Within the body, many fats travel from place to place in the blood as lipoproteins. A lipoprotein's density changes with variations in its lipid and protein contents. Two types of lipoproteins of concern to healthcare providers include low-density lipoprotein (LDL) and high-density lipoprotein (HDL). Elevated HDL concentrations are associated with a reduced risk of heart attack. High blood cholesterol levels, particularly high LDL levels, are a major risk factor for heart disease.

Sugar is an important part of our diets that we need in order to be able to function properly on a daily basis. What is important to realize is the package that this sugar comes in. There are two types of sugars, monosaccharides which are simple sugars like glucose and fructose which are found in fruits. Another type of sugar is disaccharides such as lactose which can be found in milk products (Sizer, 2016). Monosaccharides can be absorbed directly into the bloodstream whereas disaccharides need time to be digested. Consuming too much sugar, especially processed foods that contain added sugars, is detrimental to our health. Eating too much sugar can lead to increased obesity and could lead to diabetes. When people consume a diet high in sugar, the excess glucose gets stored as fat in our adipose tissue leading to obesity. The increase in sugar could also lead to increased inflammation in the body (Harvard, 2019). I do believe that foods that are higher in processed sugar should be taxed. These foods are harmful to people's health. Food manufacturers benefit from selling harmful products to people to make a profit while people every year are getting sicker and sicker. A tax on these foods would limit the people who wish to consume them simply because they are higher in price. Do you agree or disagree with this statement?
