The process to cool-down a solution can be accelerated by using a ice bath, but why shouldn't we do this when the mixture is still hot? The crystals won't form if it cools down too fast We could do it, there is no reason to wait until it is at room temperature We could have too many crystals if we cool it down too fast Too fast cooling might trap impurities in the crystals
