In a future section on the biochemistry of fatty acids, we will study the following three long-chain unsaturated carboxylic acids:
Oleic acid
CH$_3$(CH$_2$)$_7$CH=CH(CH$_2$)$_2$COOH
Linoleic acid
CH$_3$(CH$_2$)$_4$CH=CHCH$_2$CH=CH(CH$_2$)$_7$COOH
Linolenic acid
CH$_3$CH$_2$CH=CHCH$_2$CH=CHCH$_2$CH=CH(CH$_2$)$_2$COOH
Each has 18 carbons and is a component of animal fats, vegetable oils, and biological membranes. Because of their presence in animal
fats, they are called fatty acids.
