Why does the entropy of the system increase when proteins fold in water?
In an unfolded polypeptide, a large number of water molecules become ordered around hydrophobic regions. These water molecules are free to move when these hydrophobic regions are brought together in the folded conformation of the protein. This increase in disorder of the water molecules overcomes the fact that the folded polypeptide has attained a more ordered conformation.
