Gluten intolerance is characterized by symptoms ranging from anxiety to joint pain to GI tract issues. There appear to be nine different alleles that control the genes involved in metabolizing wheat gluten. They are DQ-1 through DQ-9. DQ2 and DQ8 appear to generate the worst, most painful cases. Those who are homozygous for DQ-4 can handle wheat gluten with no issues. It appears that they are somewhat incompletely dominant with those homozygous for DQ2 and DQ8 exhibiting the worst symptoms while heterozygous individuals with, say, DQ-4 and DQ-2 or DQ-8, have more moderate symptoms.
