Some microorganisms produce toxins in food products, toxins that are dangerous and/or, in some instances, deadly to humans. List and describe.

From what types of materials are cheeses made? Distinguish between the following: hard and soft cheese, ripening and salting, curd and whey. How are the characteristic holes or "eyes" in Swiss cheese produced? What microorganisms are specifically involved in yogurt production? Why is the milk heated before the introduction of the yogurt culture? What would happen to a yogurt preparation if a lightening solution was added to it? What is a homolactic acid bacterium? What is the Embden-Meyerhoff-Parnas pathway?

You will need to include at least one food product, one medicine, and one environmental product. The other product is your choice. Be specific when choosing products. For example, if you would like to do cheese, make sure to choose a specific type of cheese since they can utilize different microbes. The same would be true for bread or wine. 1. What is your product? Give a brief overview of your product, how it is made, and what it is used for. 2. Name (genus and species) at least two of the microorganisms used to produce your product. Many microbial products use multiple bacteria or microbes, so make sure you list at least 2 of them (and their role). Your microbial names should be written correctly (italicized; genus is capitalized and specific epithet is all lower case. An example would be Staphylococcus aureus.). What is the role of each of these microorganisms in producing the product?
