Digestive Enzymes Chemical digestion of the food begins in the mouth and continues throughout the gastrointestinal tract. The main digestive enzymes involved in this process are pepsin, trypsin, and chymotrypsin. These enzymes break down proteins into smaller peptides. Other enzymes, such as amylase and lipase, are responsible for the digestion of carbohydrates and fats, respectively. Brush border enzymes, located on the surface of the small intestine, further break down these molecules into their individual components.
