Purpose: The fiber in complex carbohydrates is needed for a healthy GI tract. Fiber moves waste products along the GI tract and helps to reduce the absorption of cholesterol into the body. The benefits of soluble and insoluble fibers are different, but each plays an important role. During this activity, you will select high fiber foods that meet your DRI and identify the kind of fiber (soluble or insoluble) provided in those foods. You will become aware of the different types of fiber and how easy it is to meet your daily recommendation of 25 or more grams of fiber each day with careful planning. You will use this information when you analyze your diet later in the semester.
Directions:
1. Select at least five foods that together would provide over 25 grams of fiber per day.
2. List the food item, serving size, and grams of fiber. What general category of fiber (soluble or insoluble) is found in each food? Soluble fibers reduce cholesterol; insoluble fibers increase fecal mass and speed up GI transit time. Remember not to go over the upper limit (45 grams) of fiber per day.
3. What special functions does dietary fiber serve? Think about the metabolism of glucose in the body.
