Biochemistry
Carbohydrates, Nucleic Acids, and Lipids
Foods that we call beans are plant seeds containing lots of complex sugars or oligosaccharides, which provide stored energy for the plant when it begins germination. Some of the carbohydrates in beans are digestible by the human small intestine and thus beans are a food source for us. However, other bean carbohydrates are indigestible by humans: our bodies do not produce the enzyme to break down these carbohydrates. What happens to these indigestible carbohydrates? They form part of the fiber content of food: they pass unchanged from the small intestine into the large intestine (colon). In the colon, bacteria act on these carbohydrates with bacterial enzymes, breaking the carbohydrates down by fermentation with the resultant production of lots of gases including carbon dioxide, CO2. A biotechnology product called Beano is on the market. It contains the enzyme, alpha-galactosidase. You can consume broccoli or beans with a dose of the enzyme. The enzyme allows glucose and galactose to be released and absorbed into the bloodstream through the small intestine. Every enzyme has a pH at which that particular enzyme works best. For some, the optimum pH of the enzyme is close to 7 or neutral. The Beano enzyme is naturally made by a fungus, Aspergillus niger, and biotechnology companies grow big batches of mold and purify the enzyme. Use this information as a reference for many remaining questions. Q1. Beano is a biotech product. True False Q2. Name the indigestible molecule found in beans. Q3. Why do foods like beans give people gas? Q4. Beano contains what enzyme? Q5. When Beano works, what molecules are released? Q6. When Beano works successfully, the result is an increase in _____ monomers. A. lipid B. carbohydrate C. protein D. DNA Q7. Many human enzymes have a working range that allows them to function at the neutral pH found in the cytoplasm of cells. True False Q8. Beano contains an enzyme, which are almost always _____. A. lipids B. carbohydrates C. proteins D. DNA molecules Q9. The product Beano is derived from a A. bacteria B. fungus C. virus D. legume
