QUESTION 1 A diet high in animal products and hydrogenated vegetable oils increases the risk for atherosclerosis. This is because most animal fats are unsaturated and most hydrogenated vegetable oils contain high levels of steroids. Also, most hydrogenated vegetable oils are hydrogenated oils and most animal products contain high levels of phospholipids. Additionally, most animal fats are used for energy storage and most vegetable oils contain high levels of saturated and hydrogenated fats.
