The entire process of starch digestion begins in the mouth with amylase. Starch is digested first into polysaccharides, then into disaccharides. The disaccharide maltose is catabolized into glucose, which is then converted into fructose. Glucose then can be absorbed by the small intestine. Finally, the remaining starch is further broken down in the colon into oligosaccharides.
