Enzymes are proteins whose three-dimensional shape is dependent upon environmental variables, including temperature. Enzymes function most efficiently at optimal temperatures. Temperature increases caused by fever result in efficient enzyme activity, and enzymes are able to produce more product in a given period of time. This occurs because the increased energy of molecules enhances substrate and enzyme contact. Severe increases in temperature weaken the bonds that hold an enzyme's shape. The enzyme subsequently denatures and permanently loses its function. The higher the temperature, the more likely this is to occur.

Most enzymes work in a very narrow temperature range. Taking into account what you know about how a substrate fits into the active site of the enzyme and what you have learned in lecture about how the three-dimensional shape of an enzyme is held together, speculate on what types of bonds are breaking as the enzyme moves to a temperature that is too high for it to retain its function. Hypothesize about the effect of changing enzyme temperature on the rate of reaction.
2.) However, after a certain temperature (about 45°C) the bonds within the enzyme molecule that keep its shape, begin to____ so violently that they break. This results in the enzyme losing its shape, including the active site's shape. This is called denaturation. As the substrate can no longer fit into the _____ site, the activity of the enzyme dramatically____ Once all the enzyme molecules are____ the enzyme activity will completely cease.
