The sense of smell, called olfaction, is made possible by paired olfactory organs. These olfactory organs, located in the nasal cavity on each side of the nasal septum, contain olfactory receptor cells. The epithelium of the olfactory organs covers the inferior surface of the cribriform plate, the superior portion of the perpendicular plate, and the superior nasal conchae of the ethmoid bone. The olfactory organs are made of two layers: the olfactory epithelium and the lamina propria. The olfactory receptor cells are specialized neurons within the epithelium. The exposed tip of each receptor cell forms a knob that projects beyond the epithelial surface. The knob is a base for up to 20 cilia-shaped dendrites that extend into the surrounding mucus and lie parallel to the epithelial surface, where they are exposed to dissolved chemicals. Between 10 and 20 million olfactory receptors are packed into an area of roughly 5 cm^2. If we take into account the exposed dendritic surfaces, the actual sensory area probably approaches that of the entire body surface. Olfactory reception occurs on the dendrites of the olfactory receptor cells. Odorants—dissolved chemicals that stimulate olfactory neurons—interact with membrane receptors called odorant-binding proteins on the membrane surface. In general, odorants are small, airborne, water-soluble, and lipid-soluble substances. As few as four odorant molecules can activate an olfactory receptor cell.
