Individual lipid molecules are free to diffuse laterally in one surface of the bilayer. The polar head groups of phosphoglycerides face toward the interior the bilayer and interact by hydrogen bonding. If the membrane bilayer is below its transition temperature, individual lipid molecules will be not be able to diffuse laterally in one surface of the bilayer. The higher the proportion of saturated fatty acid chains in a membrane's phosphoglycerides, the higher the membrane's transition temperature.
