In a eukaryotic cell, when oxygen is absent, the electron transport chain can't run. The cell must rely on glycolysis for ATP generation. In this situation, pyruvate doesn't enter the mitochondrion. Instead, it enters a process called fermentation in order to regenerate. In some cells, this generates carbon dioxide and ethanol, and in others, it generates lactic acid without the carbon dioxide.
