The pH of urine has been found to be correlated with diet. Acidic urine results when meat and dairy products are consumed, because the oxidation of sulfur-containing amino acids in the proteins produces protons. Consumption of fruits and vegetables leads to alkaline urine, because these foods contain plentiful amounts of potassium and magnesium carbonate salts. Why would the presence of these salts result in alkaline urine?
